Education: Graduation from high school or equivalent, supplemented by courses in food management, and on-the-job training in dietetics. Must be able to handle basic arithmetic computations.
Experience: Minimum experience of at least three years in institutional food preparation and service, or in a comparable commercial establishment involved in mass feeding, two years of which must have been in a responsible supervisory or managerial capacity is desired.
Knowledge: Considerable knowledge of food preparation, food storage and refrigeration; of sanitation standards and equipment used in institutional food service; of store keeping and record-keeping methods. Considerable skill in human relations with subordinates, superiors and with patients or residents, visitors and employees; demonstrated skill in the use and maintenance of food service equipment. Ability to train and supervise food service workers; to keep accurate records, inventories; to calculate food needs and to work effectively with employee groups; to plan, assign and review the work of subordinates; to analyze and solve work problems, making recommendations when necessary; to issue oral and written instructions effectively, and in a clear and understandable manner. Have knowledge of modified diets and ability to teach employees the importance of serving the correct diets.
Starting Salary: 34,500 / yr
